Triple Chocolate Cookies
Don't think I've ever met a girl that didn't like these cookies. They are 1/2 whole wheat flour, making them just healthy enough so that you don't feel bad eating 2. This recipe is from "The Food You Crave" by Ellie Krieger.
1/2 stick of butter, softened
1/4 cup granulated sugar
1/2 cup brown sugar
1 egg
1/4 cup canola oil
1 tsp vanilla
1/2 cup all purpose flour
1/2 cup whole wheat flour
1/4 cup cocoa powder
Pinch of salt
2 oz dark chocolate, chopped
2 oz milk chocolate chips
Preheat oven to 350 degrees.
Cream together butter and sugars. Add the egg and canola oil, stir until combined. Stir in vanilla.
In a small bowl, mix together flours, cocoa powder, and salt. Add the dry ingredients to the butter and sugar mixture. Stir until combined. Mix in chocolates. Drop by tablespoon-full's on a lined cookie sheet.
Bake for 10-12 minutes. The cookies will not spread out, so you make want to squish them a little before putting them in the oven.
