Last Minute Lunch
We had some chicken leftover from dinner last night so I decided to make some de-lux chicken salad today for lunch. I wrapped mine up in a flaxseed flat bread. Even the toddler enjoyed it, a win!!
Chicken Salad
2 cups of chicken, cooked and chopped
1 Apple chopped
3 celery stalks chopped
1 cup grapes halved
1/2 cup sliced almonds
1/2 cup mayonnaise*
Juice from 1/2 lemon
1/2 tsp garlic powder
3/4 tsp onion powder
1/4 tsp pepper
1/4 tsp salt
Mix together mayonnaise, lemon juice, and spices in a large bowl. Add chicken, apples, celery, grapes, and almonds. Toss to coat.
*replace mayonnaise with plain or Greek yogurt for more protein.
