My Thai Attempt


When Alex and I lived in Memphis, there was a great Thai restaurant around the corner, Bahn Thai. I have been trying to re-create their Pad Thai Chicken ever since. This version is vegetarian, but chicken could be added. I used edamame as a source of protein. I add a lot of vegetables, most of which are probably not traditional to Thai cooking, add whatever you like.

Vegetables:
Edamame
Red, yellow, and green bell peppers
Zucchini
Carrots
Onion
Tender green beans
Olive oil

Sauce:
1/2 cup Peanut butter
1 TbspRed wine vinegar
2-3 Tbsp Soy sauce
4 Tbsp Lime juice
Pinch of Red pepper flakes
2 tsp grated ginger
1 1/2 tsp mince garlic

Whole wheat spaghetti noodles

Cook noodles according to package directions.

After cutting the vegetables into thin strips, add to a hot skillet coated with a couple tablespoons of olive oil. Mix all of the ingredients for the sauce together. After cooking until the vegetables are tender, but still crisp, add the sauce to the pan. Add noodles to the pan and mix all ingredients together, and serve. Garnish suggestion: lime wedge.
