Lime Tilapia


We typically eat pan fried tilapia breaded with cornmeal, making it taste like fried catfish. It's great, but leaves you feeling full and heavy. Tonight we tried something lighter. Alex decided to make it tonight, we will definitely be making it again. I think it would be good in fish tacos. Also, I love how simple and quick this recipe is, courtesy of Paula Dean's sons.

Tilapia fillets
Juice and zest of 1 lime
Salt & Pepper
Garlic powder
Olive oil

Preheat oven to 375 degrees.
Spray a baking sheet with non-stick cooking spray. Sprinkle each fillet with salt, pepper, and garlic powder. Spoon about 2 teaspoons of lime juice over each fillet. Sprinkle with lime zest. Drizzle a little olive oil over each fillet. Bake for 10 minutes, or until the fish flakes easily with a fork.
