Saturday Morning Sweet Potato Pancakes


This is by far my favorite part of Saturdays. (The Farmer's Market being a close second). I look forward to it all week. It's incredibly simple. I got the recipe from a cook book by Jessica Seinfeld, "Deceitfully Delicious." I usually cut the recipe in half, but the recipe below should satisfy 2-4, depending on your appetite. For the sweet potatoes, I usually bake mine ahead of time. Bake them at 400 degrees for about 30-45 minutes. If we have baked sweet potatoes for dinner during the week, I will save an extra one in the fridge, just remove the skin and it mashes easily with a fork. You can also keep them in the freezer in a Ziploc bag, then drop them in a bowl of hot water. They will thaw in a couple of minutes.

1 cup water
1/2 cup sweet potatoes, mashed.
1/4 teaspoon cinnamon or pumpkin pie spice.
1 cup pancake mix (I use Bisquick)
Non stick cooking spray
1 tablespoon canola oil
Maple syrup or honey, if desired.

In a large bowl, mix the water, sweet potatoes, and cinnamon. Add the pancake mix, stir until combined.
Coat a large nonstick skillet with cooking spray and set over medium to medium-high heat. When the pan is heated, add the oil. Spoon the batter onto the skillet, about 1/4 of a cup of batter per pancake.
Cook until bubbles form on top of he pancakes and the batter is set, 2-3 minutes. Then flip and cook the other side for about 2-3 minutes.

You can make the pancake batter the night before, then put it in a fridge in a bowl covered with plastic wrap so that it will be ready for you in the morning.
