Pumpkin and Kale Lasagna Roll-Ups
3 of my favorite things put together: pasta, pumpkin, and kale. I tried this recipe this week for dinner, and I think I may have a new favorite pasta dish. Yum!! It looks fancy but it's very simple to make. I had some leftover ricotta and pumpkin mixture, so I saved it and ate it later in the week mixed with marinara sauce and rigatoni. So good!
