Cookies: Paleo Style


Obviously, sweets are not part of the Paleo diet. But we found a way around it. Use a food processor to grind the almonds and walnuts.

2 cups of almonds, ground
1 of walnuts, ground
1/2 teaspoon cinnamon
1 cup of honey
1/2 cup dried cranberries, chopped.

Mix the ground almonds and walnuts together with the cinnamon and cranberries. Spray a measuring cup with cooking spray so that the honey will pour out more easily. Heat the honey in the microwave for about 30 seconds so that it mixes more easily. Add the honey to the mixture, stir until combined. Put the cookie mixture in the fridge for 30 minutes to an hour. Roll into small balls, ~ 1 tablespoon each. Place on a well greased cookie sheet. Bake for about 15 minutes at 350 degrees. Watch them closely, if they cook too long they become hard as a brick after they cool.
