Bacon Cheddar & Chive Biscuits


I made these this morning after some inspiration from Kelsey's Essentials (http://www.cookingchanneltv.com/kelseys-essentials/index.html). They're pretty great. The following recipe makes about 9 or 10 biscuits.


4 slices bacon, cooked and chopped
1 1/2 cups of self-rising flour
3/4 stick of butter, diced
3/4 cup of shredded cheddar cheese
3-4 tablespoons of chives
~ 1/2 cup of milk

Preheat oven to 425 degrees. While the oven is heating, place a cast iron skillet on the middle rack. Cut the flour and butter together using a pastry cutter or fork. It is very important to make sure the butter is very cold. Add the cheese and chives, stir to combine. Add the bacon, making sure it has had time to cool so that it does not warm the butter. Add the milk, stir to combine until a ball of dough forms. Turn the dough out onto a lightly floured board. Fold 2-3 times. Cut the dough using a lightly floured biscuit cutter. When the oven has reached 425 degrees, remove the cast iron skillet. Add about 1-2 teaspoons of shortening to the bottom of the skillet so that the biscuits don't stick. After placing the biscuits in the skillet, top each biscuit with a little butter so that they brown. Bake for about 20-25 minutes until lightly browned.
