Mini Frittatas


I love these because they are so quick and you can add almost anything to them that you would put in an omelet. I changed the recipe a little to comply with Alex's Paleo diet. Where I used a splash of water, I usually use a few tablespoons of milk or half and half. I also typically use cheese, but again, doesn't fit into the Paleo diet.

6 medium eggs
~2 tablespoons of water, milk, or half and half
~ 1/4 cup of diced ham
Salt and pepper
1/2 teaspoon of onion powder
Fresh chives

Mix all of the ingredients together. Pour the mixture into mini-muffin tins, not quite to the top. Bake at 375 degrees for 8-10 minutes, until the frittatas puff, and the center is set. Serve immediately, or at room temperature. Makes 24 mini frittatas.
