CrockPot Chicken



Alex and a few of his friends started a Paleolithic diet on November first, meaning no starch, dairy, or processed foods. This definitely brings some challenges in the kitchen, and he has been doing more of the cooking lately. He found the following recipe online from a Paleolithic blog. I was skeptical because the recipe uses no liquid to cook a whole chicken in the crockpot, but it turned out great. I used it on a salad and in chicken soup.

1 whole chicken (4-5 pounds)
1 onion sliced

For rub:
2 tsp Paprika
1 tsp Garlic powder
1 tsp Black pepper
1 tsp Cayenne pepper
1 tsp Salt
1 tsp Poultry seasoning

Cover the bottom of the crock pot with sliced onions. Mix spices together, rub over the entire chicken. Place in the crockpot, breast side down, cook on low for 5 hours.
