Veggie Pasta Salad with Feta


I like to take this dish to dinner parties in the summer. It's light and full of veggies. I like to use Roasted red pepper salad dressing, but you could use any Italian flavored salad dressing you like.

1 box of whole grain rotini pasta
3-4 Tbsp Red wine vinegar
~ 1/4 cup Olive oil
1 medium cucumber, diced
2 plum tomatoes diced
2 small broccoli crowns, chopped into bite sized pieces
1/2 red pepper, diced
~ 1/4 cup Roasted red pepper salad dressing
1 package of sun-dried tomato and basil feta cheese
Salt and pepper to taste

Cook the pasta according to package directions. Toss all of the ingredients together in a large bowl. Cover, and chill in the refrigerator for a couple of hours, or overnight. Toss before serving.
