Died and Gone to Heaven Brownies


I got a craving for brownies tonight, but didn't feel like heading to the grocery store to get a box of brownie mix. I'm so glad I didn't, these brownies are beyond good.

2 sticks of butter
3 tablespoons of cocoa
1 cup of sugar
1 cup of brown sugar
4 eggs
1 cup all purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon vanilla
2 tablespoons of espresso powder
~ 1/4 cup of chocolate chips
~ 1/4 cup of English toffee pieces

Preheat the oven to 350 degrees. Spray a 13x9 inch baking dish with cooking spray.
Melt the butter and cocoa powder together over low-medium heat. Set aside to cool.
Mix the flour, salt, and baking powder together in a small bowl.
In a larger bowl, beat the sugars and eggs together until well blended. Pour the butter and cocoa mixture in with the sugar and egg mixture, beat until smooth. Stir in the espresso powder and vanilla. Add the flour mixture, stir until blended. Stir in the toffee and chocolate chips. Pour evenly into the baking dish, bake for 25 minutes or until a knife inserted in the center comes out clean. Allow the brownies to cool, pour the icing evenly over the brownies if using.

For the icing:
~ 3/4 cup of powdered sugar
2 teaspoons of espresso powder
1 teaspoon of vanilla
Water

Mix the sugar, espresso, and vanilla together. Slowly add water, about a teaspoon at a time, until the mixture is thin enough to pour easily. (I probably used about 2 tablespoons of water total).
