Zucchini, Peppers, and Onions with Sausage


I got inspiration for this recipe from a blog that Alex likes to read, Everyday Paleo, some great recipes can be found here. I used chicken sausage, but you could use any kind that you like. I added chick peas because I had a can in the pantry and I really like them, but you could easily leave them out.

Serves 2; Prep time: 10 minutes Cook time: about 30 minutes

1 package chicken sausage ( I used Italian Flavor)
1/2 large yellow onion, sliced thin
2 large zucchinis, sliced thin
1 - 14 oz can artichoke hearts, quartered
1 red bell pepper, sliced thin
1 -14 oz can of crushed or diced tomatoes
1 clove garlic, minced
1 - 14 oz can chick peas
~2 teaspoons marjoram (has a flavor similar to oregano)
~ 1 teaspoon chili powder
Olive oil
Salt and pepper to taste

Heat the olive oil over medium heat. Add the onions and red bell pepper, they will take the longest to cook. After they become a little soft, and the onions start to become translucent, add the zucchini and artichoke hearts. Add the salt and pepper. Cook for a couple minutes, stirring occasionally. Add the garlic, can of tomatoes, chili powder, and marjoram. Stir together, turn the heat down, allow to cook for a few minutes, add the sausage. Cook for about 5 more minutes until the sausage is heated through. Add the can of chick peas and stir together, if using. Serve immediately. I topped mine with a sprinkle of Parmesan cheese.
