Grilling Sides

We bought a grill a couple of weeks ago, which means I've been searching pinterest for grilling side dishes to go with everything from BBQ chicken to pork chops to burgers and steak.  I try to come up with things a little more creative than salad and a baked potato (since the side dishes pretty much make up  my entire dinner).  This is what I came up with this week to go along side lime-chipotle flank steak.

Black bean and corn salad

1 can black beans
1 1/2 cups frozen corn (thawed)
~1/4 cup red onion diced
1 garlic clove minced
1 small tomato, diced
Juice of 1 lime
~ 1/3 cup mayonaise
Chili powder
Ground coriander
Salt & pepper
Parsley or cilantro

Mix together the last 6 ingredients in a small bowl.  In a larger bowl add the beans, corn, onion, tomato and garlic.  Pour the dressing over the bean mixture.  Stir, serve immediately or refrigerate until ready to serve.

Spicy sweet potato wedges

2 small sweet potatoes, sliced into wedges
Olive oil
Chili powder
Ground coriander
Salt & pepper

Line a baking sheet with aluminum foil.  Preheat oven to 425 degrees.  Sprinkle potato wedges with spices, toss with olive oil to coat.  Bake for 20-25 minutes.
