Mushroom & Potato Hash

I came home at 11:30 today after a busy morning running errands and squeezing in a quick workout.  I was starving!  But a veggie burger didn't sound good sooo I came up with a breakfast hash creation from dinner leftovers from earlier this week: sauteed onions and mushrooms, a baked potato, and I threw in a scrambled egg.  Hash-tastic.  I practically licked my plate.  I heated about a tablespoon of canola oil in a pan, diced the baked potato and fried it for a few minutes until it just started to brown.  I added the mushroom and onions just long enough to heat them, pushed everything to one side of the pan, added the egg with salt and pepper, then mixed everything together after the egg was almost finished cooking. Yum.
