Homemade Vegetable Soup

Soup weather has arrived... last night I decided to celebrate.

1/2 medium onion chopped
3 garlic cloves chopped
~3-4 Tbsp olive oil
2 medium carrots chopped
1 bag frozen vegetables for soup (I actually used gumbo vegetables, because me and okra get along really well)
~3-4 Tbsp Vermouth (or white wine)
1 can crushed tomatoes
1 tsp thyme
1 bay leaf
Handful of lentils
Salt and pepper to taste

In a large pot, saute the onions and carrots in heated olive oil until the onions are translucent.  Add the garlic, saute a couple more minutes.  Add salt and pepper.  Add the remaining ingredients, bring to a simmer, turn the heat to low and cook for another 20-30 minutes, until the lentils are done.  Make some cornbread or cheddar biscuits, sprinkle some hot sauce on the soup at the table and enjoy!
