Veggie Wrap

Every year in the middle of winter, I start to crave fresh summer vegetables.  I love having this for lunch because it's light, and doesn't lead to that "2:30 feeling" like carb-heavy meals can, which means that I actually stay awake during afternoon meetings.  Also, it's yummy!

2 carrots, juilliened
1 zucchini, juilliened
Salt, pepper
Juice of 1/2 lime
~1 tsp apple cider vinegar
~1 tsp honey
~2 Tbsp chopped parsley
~ 1 Tbsp olive oil

Toss ingredients together, serve as a side dish, or as a wrap with hummus.
