Banana Bread

The best solution for brown bananas, plus it's shamefully easy (that's for you, Stephanie!)  This was my first time making this particular recipe.  The only change that I made from the original recipe was trading an egg for applesauce (making it vegan friendly!), which works out great because it makes the bread even more moist.  Pour a cup of coffee and enjoy! 

Yield: One 8x4" loaf

2 Tbsp Earth Balance (or butter), melted
1/2 cup whole wheat flour
3/4 cup all purpose flour
1/4 cup ground flax seed
3/4 teaspoon salt
1/2 tsp baking powder
1/2 tsp baking soda
1/4 cup applesauce
1/2 cup brown sugar
1 tsp vanilla
3/4 cup mashed ripe bananas (2 medium bananas)
1/2 cup walnuts, if desired
Cooking spray

Preheat oven to 350 degrees.  Spray loaf pan with cooking spray.
Mix together the flours, flax seed, salt, baking powder and soda, set aside.  Mix together bananas, applesauce, brown sugar, butter and vanilla.  Add the dry ingredients to the wet ingredients, stir in walnuts if using.  Pour batter into pan.  Bake for 35 minutes, or until a knife inserted comes out clean.
