Friendsgiving Brunch

Friendsgiving was a success!  I hope this becomes an annual tradition.  We had a great time catching up with old friends over some good food.  Now the kitchen is clean and it's time to put up Christmas decorations!

The menu: Veggie breakfast casserole, Cinnamon French toast casserole, oven fried potatoes, broiled tomatoes, coffee, and hot chocolate.
Here we go!

Veggie Breakfast Casserole

6 eggs
1 cup milk
1/2 cup cream
1/2 loaf French bread, torn into bite sized pieces
1 package sliced baby portabello mushrooms
3/4 red bell pepper, chopped
1/2 onion chopped
1 cup fresh spinach, torn
Canola oil
Salt & pepper
Parsley
1 cup cheddar cheese

Grease a 13x9" baking dish.  Heat canola oil in a skillet, cook onions and bell pepper until soft, add mushrooms, cook until browned, add the spinach and toss, enough to wilt spinach.  Remove from heat, set aside.  Mix together eggs, milk, cream, and seasonings.  Add vegetables to egg mixture, stir together and pour over bread pieces.   Sprinkle with cheese.  Cover, refrigerate overnight.  Preheat oven to 350 degrees, allow the casserole to sit at room temperature as the oven heats.  Bake for about 30 minutes.

Cinnamon French Toast Bake 
Can't take credit for this recipe!  See link.  The only think I changed with this recipe is the amount of vanilla - it calls for 2 tablespoons, I used 1 tablespoon.  Serve with maple syrup... and coffee.

Oven Fried Potatoes

5 Yukon gold potatoes diced
Olive oil
Salt and Pepper
Onion powder
Parsley

Preheat oven to 400 degrees, toss potatoes and remaining ingredients together on a baking sheet lined with aluminum foil, bake for about 45 minutes.

Broiled Tomatoes

Plum tomatoes, halved
Parmesan cheese
Seasoned breadcrumbs
Olive oil

Scoop the middle out of the tomatoes, drizzle with olive oil.  Mix together breadcrumbs and cheese, sprinkle over tomatoes.  Broil on high (500 degrees) until the topping is browned.  Watch carefully!

Suzie's Hot Chocolate

3 tablespoons each of cocoa powder and powdered sugar, mix together.  Add a couple tablespoons to a cup, add a few white chocolate and semi-sweet chocolate chips.  Pour in heated milk, mix and drink up.
