Salmon with Brown Rice and Sauteed Spinach

A simple dinner that I never get tired of. I love salmon, and always look for it to be on sale at the seafood counter. I prefer to buy wild caught when available. Salmon that are caught wild contain more heart healthy fats, and they also eat their natural diet, so that they naturally contain more nutrients. Farm raised salmon tend to contain less fat, because they live in an environment where the temperature is controlled. They also produce fewer antibodies, because they are given antibiotics. Farm raised salmon are sometimes fed a diet that consists mostly of corn, which for us means that fewer nutrients are available.

Salmon seasoned with garlic powder, salt, pepper, and chili powder.

Sear salmon on both sides in a couple tablespoons of olive oil. About 3 mins on each side.

Finish in the oven at 400 degrees for about 15 mins.

Cook rice according to package directions.

Heat a skillet to medium heat. Add olive oil and minced garlic to the pan. Toss spinach in the pan with the garlic; add salt and pepper to taste. Cook until wilted.
