Flatbreads

We sometimes make flatbread pizzas when we have leftovers, it's an easy way to use meat and vegetables you aren't sure what to do with.  Alex's consisted of chicken, bacon, mozzarella cheese, red peppers, and onion.  On mine I put red peppers, onions, and tomato sauce.  Bake at 400 degrees for about 15 minutes, then finish the under the broiler for no more than 5 minutes, watch them carefully so that they don't burn.  Serve with a salad - easy weeknight meal.
