Tilapia Patties

We had some leftover tilapia in the fridge that I didn't want to throw out, and tilapia reheated in the microwave sounded less than appetizing.  What does one do when one is looking for an answer?  One googles the question.  "What to do with leftover tilapia?" and I found this recipe.  It turned out much better than I actually expected, I was afraid that it might be a little bland, but it was actually really good.  I enjoyed it with some yummy lime and parsley coleslaw.  Scallions would be a great addition to these, unfortunately I didn't have any, but you do, throw them in.

4 tilapia filets
1/4 cup mayonnaise
~3/4 cup seasoned bread crumbs
2 eggs
Juice of 1/2 lemon
~ 1 tsp lemon zest
~ 1 Tbsp flour
Salt and Pepper to taste
Canola oil

Brush the tilapia filets with olive oil, season with salt and pepper.  Broil for about 6-8 minutes on a baking sheet, or until the filets flake easily with a fork.  Allow the fish to cool, then flake the filets in a large bowl.  Add the mayonnaise, breadcrumbs, eggs, lemon juice and zest, salt and pepper.  Mix together.  If the mixture is still a little thin, add the flour the thicken.  Heat canola oil in a skillet over medium heat, enough to coat the bottom of the pan.  Drop spoonfuls of the tilapia mixture into the hot oil, brown on both sides.  Serve hot.
