Unexpected Request

We had our usual "what's for dinner?" conversation this afternoon.  Alex threw me for a loop when he said "I'm thinking salad."  Whaaa?  Ok husband.   Alex decided to fire up the grill.  I marinated the chicken in a mixture of olive oil, lemon juice, rosemary, thyme, and garlic.  For the salad, I used dark leafy greens, chopped apples, sliced avocado, carrots, and parmesan cheese.  I made salad dressing using diced red onion, olive oil, dijon mustard, apple cider vinegar, honey, salt and pepper.  I'm keeping this on file for the next time Alex wants salad for dinner... probably a year from now.
