Chocolatey Overnight Oatmeal

Since I started following PBFingers.com, I've been loving overnight oatmeal for breakfast.  Yesterday I found a recipe that called for cocoa... whaaat?  Chocolate for breakfast?  Yummm.  It's like cocoa puffs... only good for you.  I also switched from flaxseed to chia seeds.  Double yum.  Have you learned about these amazing chia seeds?  High in fiber, high in protein, high in omega-3 fatty acids, no downside.  They help to thicken the oatmeal as it sits overnight.  Give it a try!

~ 1/4 cup oatmeal
2 tsp cocoa powder
1 tsp honey
2 tsp chia seeds
~ 1/2 to 3/4 cup soy / almond/ cocoanut milk, depending on how thick you like your oatmeal.

Refrigerate overnight, enjoy!
